Rose Meringues

Rose meringues are a Provençale specialty, this is a classic recipe with a modern design twist. By adding a violet colored powder sugar coating, the light rose color of the meringues is contrasted, creating a beautiful .

4 egg whites

1 cup of sugar

1 Tbsp of rose syrup

1 drop of rose coloring

2 drops of violet coloring

1/4 cup of confectioner's powder sugar

In a blender, whisk the egg whites while slowly adding the sugar and drop of rose coloring.

As the egg whites become fluffy, light and high in volume, place parchement paper on a cookie sheet and use large spoon to evenly place a dollop of the batter, then create wave like shapes with a small spoon to create a wide bottom, and high top.

Place the meringues in a preheated oven of 100C/212F for 1 hour

Then turn the oven off, and open the oven door and let the meringues cool in the oven.

To make a violet powder, whisk the sugar together with the violet coloring drops, then sprinkle on top of the meringue.
