Apricot & Lavender Tart

Lavender is a signature flavor of Provence, and pairing it with apricots is a delcious yet subtle way to create a delicious dessert.

12 Ripe apricots

Classic pastry crust

1 Teaspoon of lavender

4 eggs

60 gms sugar

100gm flour

1/4 cup milk

60 gm melted butter

Halve the apricots and place cut side up onto the pastry crust.

Mix the eggs, sugar, milk, flour, lavender and butter, then pour on top of the apricots

Bake in oven at 180º for 30-50 minutes, (last 10 minutes sprinkle additional sugar on top to caramelize).
